Beef and Lentil Meatloaf

Beef is expensive, so use this recipe to help stretch it a little further while also adding great nutrition into your meals! Lentils are packed with fiber, so this meal will not only help your bank account, but your gut as well!

Beef and Lentil Meatloaf

Ingredients

  • 1 cup dry lentils

  • 2 eggs

  • 1/2 cup ketchup or bbq sauce

  • 2 tbsp of mustard

  • 1 lb ground beef, turkey, chicken, or pork.

  • 1 tsp garlic powder

  • 1 tbsp black pepper

  • 1 tsp salt

  • Green onions (or regular onion or onion powder)

Instructions

  1. Rinse lentils

  2. Add lentils and 2 cups of water to a pot and bring to a boil. Reduce the heat and cover. Simmer for 35-40 minutes until tender. Drain off any excess water.

  3. Heat oven to 350 degrees Farhenheit

  4. In a large bowl, mash 1 cup of the cooked lentils with a fork.

  5. Add 1 egg and continue mashing until mostly pureed.

  6. Add another egg, 1/2 cup ketchup (or bbq sauce) and mustard and mix well.

  7. Add in the other cup of lentils and all seasonings and green onions (use regular onions or onion powder if you need to) and mix well.

  8. Add in the 1 pound of ground beef and mix well

  9. Put into a loaf pan, and 8X8 pan, or shape into a loaf and bake for 25 - 30 minutes. (Beef is safe to eat at 160 degrees internal and turkey or chicken at 165 degrees internal).

This recipe is super flexible! Change the spices to whatever you like the most and enjoy with rice or mashed potatoes, and a side of green beans or carrots! The sky is the limit!
